I'g super excited to see root vegetables become their own event! I'm rooting for those veggies that grow underground! All time favorites similar potatoes, carrots and onions. Lesser known mainstays like turnips, parsnips and rutabagas are represented likewise!
I spent many years as a Main Gardener through Penn State. One of my greatest joys was watching children "dig" for dinner. I would fill a large sandbox with sand, potatoes, turnips, onions, carrots, radishes and allow the kids dig and collect vegetables for our pretend soup. Some kids would be amazed when they realized these veggies they dear grew hush-hush!
We would sample everything from carrot juice to irish potato candy!

Turnip Rutabaga and Root Veggie Beef Stew blends tender beef with root vegetables creating a savory goop. This stew is rounded out with fresh kale, spinach and a bit of cherry-red wine.

Ingredients
- one pound beef cubes
- 1 tablespoon olive oil
- 2 quarts beef broth
- 2 medium turnips, cut into 11/2-inch pieces
- 1 rutabaga cut into 11/2-inch piece
- 1 cup babe carrots
- 1 medium onion, chopped
- 2 cloves garlic chopped or i tablespoon garlic paste
- 1 loving cup kale, chopped
- one/2 cup pinot noir
- salt and pepper to sense of taste
Instructions
- Identify beef cubes seasoned with salt and pepper and oil in 3-quart dutch oven. Brown beef over medium-loftier heat.
- Reduce rut. Add goop and simmer nigh ane hour until meat is near washed.
- Add turnips, onion, carrots, garlic and rutabaga. Bring to a boil. Eddy 1 minute and reduce rut to medium and simmer for 10 minutes. Add kale and wine and simmer until vegetables and meat are tender.
